We are a day away from Christmas Eve here in Encinitas, and that means last minute checklists, scrambling around the malls in Encinitas for the perfect gift at the perfect price, and getting everything prepared for Christmas Dinner. Whether you and your family are celebrating this year on Christmas Eve or Christmas Day, I will provide you with tips and recipes for planning the perfect dinner on Christmas with these Christmas recipes.
I got you started off yesterday with some Christmas appetizers recipes and today I will provide some simple yet delightful recipes for Christmas dinner. Be sure to get everything you need for Christmas dinner at the grocery store, and add anything else you like for Christmas dinner. These are just some recommendations and you can add to or subtract any of them.
These Christmas dinner recipes will be for parties of 8, so alter these Christmas dinner recipes for your guests. Now, onto the Christmas dinner recipes!
Christmas Ham Recipe: Nothing says Christmas dinner like a beautiful Christmas ham! I enjoy cutting the ham at the dinner table, so be sure to get a ham that isn’t spiral cut if you want to carve your ham! To get started, cut small scores in a triangle pattern on your ham for presentation, and insert some cloves all throughout the ham for a delicious flavor once cooked. Cook the ham in your oven at 325 degrees for about 14 minutes per pound but insert a meat thermometer to check the temperature of the ham as you cook it. As the ham is cooking, get started on this delicious glaze for the ham once it is finished in the oven. For the glaze, you will need:
- 4 teaspoons of Apple Juice
- 3 tablespoons of Maple Syrup
- 1 cup of Dark Brown Sugar
- Pinch of Ground Ginger
- Pineapple Slices
1. Combine the apple juice, maple syrup, brown sugar and ginger in a saucepan
2. Bring to a boil to let everything combine and melt together for about 15 minutes on medium heat
3. When your glaze is ready, the ham should have been cooking for about a half hour or so. Take the ham out of your oven and sprinkle pineapple slices around the pan you are cooking it in
4. Take your glaze and brush the ham with your glaze and be generous because it is delicious!
5. Place your ham back in the oven to finish cooking for the rest of the time you need – remember 14 minutes per pound
6. Do the honors yourself and carve your fabulous Christmas ham at your table and serve your guests!
Christmas Sweet Potato Casserole Recipe: I just love sweet potatoes as I find them to be tastier and more healthy than regular potatoes. This recipe for sweet potato casserole has a nice sweet taste to it and goes great with your Christmas ham recipe. It also adds a nice orange red color for your dinner table and it smells just wonderful. To get started on your sweet potato casserole recipe, you are going to be needing:
- 3 cups of Sweet Potatoes – Mashed
- ½ of a cup of Sugar
- 2 Extra Large Eggs
- 1 stick of Butter or Margarine
- 1 teaspoon Vanilla
- 1 teaspoon Ground Nutmeg
1. Mix all ingredients in a large bowl.
2. Take a large square casserole dish and coat it with non-stick spray or oil.
3. Pour the sweet potato mixture into your casserole dish.
4. Preheat your oven to 350 degrees, and start making the topping for this sweet potato casserole of pecan crust sprinkles. For this, you will need:
- 4 tablespoons of room temperature Butter
- ½ cup Flour
- ½ Cup Brown Sugar
- ½ Cup Pecans
5. Blend the butter, flour and brown sugar together in a small bowl.
6. Stir in the Pecans.
7. Sprinkle the pecan topping on top of the sweet potato casserole.
8. Bake on 350 degrees for around 30 minutes.
9. This will be hot so warn your guests that they don’t burn their mouths as they try and devour this dish quickly!
Christmas Green Bean Casserole Recipe: This recipe for green bean casserole will provide a nice Christmas green color to your dinner table. It is also a rather healthy and filling dish that will warm your guests up during the cold December day on Christmas. This recipe for Christmas dinner is quite inexpensive and doesn’t take much effort to whip together, but it comes out looking like you spent hours on it! Your guests will appreciate the Christmas green bean casserole, so to get it started you are going to need:
- 2 cans Cream of Mushroom Soup
- 1 cup Milk
- Dash Pepper
- 8 cups Cooked Green Beans
- 2 cans Fried Onion Strings
1. Pour the cans of soup in a large mixing bowl
2. Add Milk and Sprinkle Pepper in the Bowl
3. Add the green beans
4. Add half of the fried onions to the Bowl and save the rest in the can for now
5. Stir Everything together for a few minutes with a spatula
6. Place the mixture in a large enough casserole dish
7. Cook at 350 Degrees for about 30 Minutes
8. Once Cooked, take the other half of the fried onions and sprinkle them on top of the casserole
9. Place the casserole dish back in the oven for another few minutes
10. Enjoy your green bean casserole along with your guests at Christmas dinner!
Colorful Christmas Fruit Salad Recipe: Now that we have two vegetable dishes, let’s make your dinner table a lot more colorful with this Christmas fruit salad recipe! I like to keep a healthy balance of foods during Christmas dinner, so help your guests get their share of fruits even on Christmas with this recipe for fruit salad for Christmas. You will need:
- 2 Seedless Oranges
- A Bunch of Seedless Grapes
- 2 Apples
- 2 Pears
- 3 Bananas
- 1 ½ Cups of Brown Sugar
- 2 Tablespoons of Cornstarch
- 1 Cup of Water
- 1 Tablespoon of White Vinegar
1. Peel your oranges, and then slice the Orange slices in half so you have 16 orange slice halves
2. Use patience and half all of the grapes in your bunch
3. Leave the skins on the apples and pears, and chop these into pieces that are in similar size to the orange slice halves
4. Peel your bananas and slice them into little pieces like the other fruits
5. Put the brown sugar and cornstarch in a small saucepan and stir
6. Add the water and vinegar to the saucepan
7. Turn your burner on your stove on about medium cooking slowly and stirring occasionally until the sugar is dissolved and the cornstarch starts to thicken
8. Remove from heat and let the Mix sit in the refrigerator to cool. The mixture should have the color of molasses and should be cooled – do not proceed with a hot mixture
9. Take a large bowl that you will use for the fruit salad and combine all the fruits that you chopped up already and do your best to stir the fruits up together
10. Glaze the brown sugar sauce all over the fruits and stir thoroughly
11. Either serve right on your guests’ dinner plates or serve in a nice Christmas bowl for presentation!
