Last Friday I featured a blog post about the many things to do in Julian which included the seasonal tradition of fall apple picking. I hope that many of my readers got the chance to visit and bring back some sweet delicious apples to their Encinitas homes.
We’ve all heard the expression “an apple a day keeps the doctor away” and it’s based in medical fact. Apples contain high concentrations of pectin,which helps to stabilize blood sugar levels. Eating apples stimulates the flow of saliva which aids in promoting good digestion. Munching on a crisp apple helps to clean the teeth and stimulate gum tissue. Apples are rich in flavonoids, beta-carotene and vitamins, B, C and contain important minerals such as boron, calcium, phosphorus, potassium and silicon. Typically the tarter an apple is, the higher its Vitamin C content will be. This tasty fruit is frequently associated with the planet Venus, the earthly element of water and the attributes of peace, love and health.
There is a bountiful harvest of healthy apple based treats you can make in preparation for Halloween and a childhood favorite of mine has always been caramel apples. Caramel apples were invented back in the 1950’s. Their originator was a gentlemen by the name of Dan Walker, who at the time was working for the Kraft foods company. Back then Kraft caramels were a candy standard for Halloween, and to this day they honor the tradition by printing the recipe on the back of their individually wrapped caramel packaging. Later in 1960 the very first caramel apple machine was invented and subsequently patented by Vito Raimondi with the help of his uncle William in Chicago, Illinois where they continue to own an operate one of the largest companies making equipment for mass produced caramel apples. Making them by hand is the best way to get your family into the holiday spirit.
